Lots and lots of food

As I'm sure many people already know, three out of the four people in our household are vegetarian. {Kyle being the non-vegetarian}  I've been a vegetarian since 7th grade.  Kyle has eaten meat his entire life.  He eats meat out, but never at home.  I ate fish for the first few years and then stopped eating it sometime in high school.  Over the years, I've gotten lots of questions and concerns about this lifestyle choice.  Is it the best way to feed yourself and your children? I can't say yes for everyone, but it works very well for us.  Is it healthy? Again, I can't say what's healthiest for everyone, but for us, our diet is *usually* healthy and nutritious.  But what do you EAT? Everything and anything!

In our house, we eat a variety of foods.  We have our staples, but I am always trying out new recipes and new ingredients.  At least two nights a week I find a recipe either online, in a magazine {Vegetarian Times or Whole Living}, Pinterest, or in one of my vegetarian cookbooks.  I can definitely understand how a person who consumes meat at every meal could have a hard time realizing our diet is anything but dull and boring.  My kids eat every type of vegetable both raw and cooked, tons and tons of fruit, whole grains, cheese, yogurt, eggs and so much more.  {We aren't vegan so we do eat eggs and dairy} And actually, recently, Kyle and I decided to start eating fish in our home for nutritional and convenience reasons. It is something I am still going back and forth on, so not sure if it will be a permanent change or not.  And to be honest, eating fleshy fish still really weirds me out.

Other than fish, neither of my children have ever eaten meat.  The few times we've offered Cambria fish she hasn't touched it or she's put it in her mouth and instantly spit it back out.  Ezra is too young to notice or care at this point, but he doesn't seem to mind the change.

Whenever something is really delicious, I take a picture of the dish to remember it and because I'm usually proud of the meal. :)Here are some of my favorites over the last few months.  {Seriously, we take lots of pictures of food!}
This was pasta with homemade pesto, spinach and then topped with ricotta cheese.  Roasted butternut squash as a side.  We add spinach to our pasta by throwing it in the bottom of the colander then pouring the boiling water and noodles over it to wilt the leaves.  Such an easy way to add some dark leafy greens to your meal!
This is brown rice, amazing homemade veggie stir-fry sauce {(neverhome)maker is an excellent resource for a vegetarian diet}, pan-fried tofu, and a side of roasted broccoli. One day I am going to do a post on cooking tofu the way it's pictured above.  It's seriously good!
This was some risotto that I cannot find, roasted asparagus, and butternut squash soup.  Can you tell that we like to roast our veggies around here... :)

This was a Saturday morning where I made the quiche recipe my sister first shared on her blog, but I added spinach and ate it with coffee and honeydew.
We love smoothies! Again, (neverhome)maker.com has some awesome smoothies recipes.  This one is the 20/20 shake. Some staple smoothie ingredients I use: almond milk, frozen fruit, oats, maple syrup, agave nectar, bananas, ice, peanut butter, coconut flakes, spinach.
This is the same stir-fry from above except with quinoa pasta.  Definitely recommend the pasta if you're looking for less wheat/gluten.

A marinated then grilled portobella mushroom topped with lots and lots of cheese and roasted red peppers, roasted Brussels sprouts and red potatoes with cheese cooked in the crock pot.

Another typical lunch, Annie's Mac n' Cheese with added frozen peas and carrots + strawberries.
We LOVE Mellow Mushroom.  Our favorite pizza: BBQ base, BBQ tofu, and onions. Yuuuuuuuuum.

Store-bought cheese tortellini and pesto, kale chips, and roasted carrots.
Blueberries, raspberries, scrambled egg and peanut butter toast for breakfast.
Caprese: shells, tomatoes, mozzarella, olive oil, basil, and a little kale {or whatever leafy green we have in the fridge}.  This recipe was passed down from my college roommate Kirsten and I believe all of us make it now with our own families. 
One of the meals I've made with fish: sauteed shrimp and onions and peppers, corn salsa, tomatoes, avocado, sour cream, broccoli...basically a burrito bowl.
Whole wheat English muffin topped with hummus, pesto, avocado and sprouts.  Side of sweet potato fries and extra pesto for dipping.  {I found recipe in Whole Living magazine, but can't find it online}
And of course I can't forget our most favorite yogurt, CHOBANI! I know I've talked about this yogurt many times before but we just really, really love it.

In the last few months, I've really become more conscious of what I am putting in my body and in my children's. We definitely aren't perfect and have our fair share of guilty pleasures: Seasons of Japan, Olive Garden, and coke, just to name a few. With every single meal I analyze the nutritional benefit or lack thereof {sometimes to an unhealthy extent}. I want to grow healthy children now and instill in them a love of good, wholesome food for the rest of their lives. 
  
I hope I've inspired someone to make one of these recipes. I'll try and post more as I make other delicious foodies!

23 Years

June 28th, 2009  My 21st birthday, 8 months pregnant
June 28th, 2010  My 22nd birthday, 1 month pregnant
Today, My 23rd birthday, not pregnant.
Birthdays really help to put things in perspective.  It's crazy to think how different my life happenings are in each of those pictures.  I'm happy to have lived 23 years so far! I'm thankful for this and every birthday because we're never really promised tomorrow.  I've made a list of a few things I want to do during this next year. 

*Finish Cambria's quilt and make Ezra one too.  

*Create beautiful rooms for both my children.  

*Continue the never-ending process of decorating my house.

*As much as I hate the phrase, I want to have "date night" with Kyle every month.  I think it will be good for us, our marriage, and our children. 

*Run a marathon. 

*Create healthy and delicious food for my family. 

*Make a conscious effort to find meaning and value in everything that I do, even in relaxing, which often makes me feel guilty.  

*(Hopefully!!!!!) Attend my first birth, aside from my own and my children's. 

*Finish Cambria's 1st year scrapbook and begin and finish Ezra's. 

*Make/buy thoughtful gifts for my loved ones. 

*Find a program or a cause to volunteer for.

*Spend more time and effort staying in touch with friends.  When you have kids this oftentimes becomes difficult, but it's really important, so I want to try and work on it. 

*Love on my babies as much as possible.  Looking at that picture of Cambria a year ago reminds me that time flies by and every precious phase they go through lasts for what seems like a moment and then passes.  

*Begin and complete a 365 photo a day project starting today and ending June 28th, 2012. 

So that's my list.  Hopefully I can see it through!

Today has been a wonderful day because I spent it with {some of} the people I love most in the world.

Recent Recipes

I wanted to share a few things I (we) have made recently that have turned out delicious.

First, this Pasta with Butternut Squash, Sage, and Pine Nuts.  It's more of a winter/fall dish, but since we got some butternut squash in our veggie box from the co-op, I found this recipe online. I've never cooked with sage before and was pleasantly surprised by the flavor it brought to this dish. 

Kyle found this awesome vegetarian stuffed pepper recipe.  It had beans and quinoa, great for us vegetarians.  I paired it with this cole slaw recipe which was also tasty and different from your usual cole slaw because it had red pepper and apples. 

I made strawberry and banana Nutella crepes on Friday for breakfast.  Yummmmmmmy!!! Any crepe recipe will do and just add the rest to enjoy this DIVINE dish. 

And yesterday evening we used our new grill  to grill a few pizzas.  The Red, White, and Green pizza was burnt on the bottom and not done enough on top, but the Balsamic, Onion, and Goat cheese one turned out perfect.  If that combination is your style please give it a try, you will enjoy it. We used onions and a tomato from our garden, twas exciting!

Our Garden

 This was our garden on it's very first day of existence.
 And this is our garden today.

I've been wanting to blog about our garden for a while now, but have been putting it off for some reason.   And I had wanted Kyle to write this post since the garden has been completely his doing, but he wasn't into it.  Oh well, you'll just have to hear it from me! :)

It all started when Kyle bought this book on amazon called Square Foot Gardening.  The whole idea is basically using a lot less space for your garden by planting everything in a raised bed that is divided into 16 square foot boxes.  It uses less space and can be placed anywhere, even on a city balcony or porch, as long as the garden would get enough sunshine!  So after lots of talking about it, one Saturday we finally headed off to Home Depot to gather all the supplies. 

The first step was assembling the box. 
First he screwed 4-4 foot cedar boards together.

Then he screwed these 6 pieces of wood together to make the grid.

It was then moved to the backyard.  And this spot was picked after lots and lots of discussion about where it should've gone..

The book explains how to create the perfect soil mixture: peat moss, vermiculite, and a few different types of compost.

He then mixed it all together on this tarp.

He lined the bottom of the box with weed-blocker-fabric and then filled it with the soil mixture.  And finally we (Kyle) got to plant everything!
The garden is filled with lots of yummy veggies: red (actually green) peppers, spinach that was replaced by corn because it was a FAIL, squash, cucumbers, tomatoes, onions, carrots, lettuce, more peppers, watermelon, basil, zucchini, more squash, and strawberries which also failed.  We also planted some marigolds to help keep the buggies away.

Now I'm gonna show you a few of the treasures that have started growing.  WARNING: I feel like a proud mother showing these photos, but if pictures of plants bore you, please do not proceed.

And the basil and squash today.  I've probably picked about 6 cups of basil off these already.  These squash have really only been successful at smothering all the plants surrounding it...

Kyle LOVES this garden.  Everyday he comes home from work, says hello to us, and then heads out to tend to it.  What a good garden daddy he is!  I love it though because we all hang out outside for a while and Cambria has a blast watering the plants and helping Kyle.  She also likes to sneak up and steal tomotoes that aren't yet ready to be picked... But seriously, I love that she is (literally) getting down and dirty with dirt and is already able to realize where some of the food she eats actually comes from.  I know a lot of children will never have that opportunity, so I am very grateful my children can experience it.

So far, we've eaten lettuce, basil, and onion.  Hopefully soon more of the goodness will be ready to be picked and eaten! The whole gardening thing seemed scary and intimidating at first, but it's really been fun.  Oh and we will be able to use this bed for a long time, as long as the wood holds up.  I think everyone should give gardening a try, even if it's one little plant, the satisfaction of seeing your work produce something feels fantastic!
